Similar to Italian Focaccia, but more moist, these flat, Turkish patties are simple to prepare and contain no yeast.
Serves 3-4
INGREDIENTS:
2 eggs
1 cup milk
small pinch of dried oregano or chopped leaves of rosemary
1 teaspoon salt
1 ¼ cups all-purpose flour
6-ounces roughly chopped Green Olives
½ cup extra virgin olive oil
DIRECTIONS:
Preheat the oven to 350 degrees. Beat the eggs and milk in a mixing bowl until frothy. Add the herbs and salt and gradually mix in the flour. Beat thoroughly to a runny paste and mix in the chopped olives and the olive oil.
Spoon the mixture into a large, shallow, oiled baking pan and bake for 25 minutes until lightly browned. Serve hot, out of the oven, or reheated. May be topped with cheese, tomato and herbs for a unique pizza.
