Other root vegetables can be substituted and any infused maple syrups can be used.
Serves 4
INGREDIENTS:
1 large bunch beets (about 8-10 beets), washed and peeled
1 Tbsp extra virgin olive oil
Salt and pepper to taste
1/4 c Maple Syrup
DIRECTIONS:
Preheat oven to 375º F.
Cut beets into large pieces. Toss with olive oil and salt and pepper. Place in shallow baking pan. Roast until crisp-tender (approximately 25-30 minutes). Remove from oven and pour Maple Syrup over beets.
Toss and return to oven for approximately 10 minutes.
