Besides being amazed at the 5-pound size, I was also struck by the color of this free-range fowl. It was pink. All right, you might think that the frozen chickens that you have in your freezer, or that you see in the grocery store are pink, but you’re wrong. They are varying shades of yellow, beige and almost white. This chicken is pink, and a healthy pink at that! Large, pink and healthy looking: this is a great start!
After defrosting it, I washed it off, but it was already absolutely clean. The skin was firm and there were no globs of fat hanging off of it and for those who like them, the giblets were all there in a nice neat package.
I have one of those roasting trays where the chicken sort of stands up to roast. This way, the juices drip down to the breast and the whole thing bastes itself. Well, I put this chicken on that, and being so large, it almost swallowed the roasting stand! Undaunted, I maneuvered the shelf in the oven to the lowest rack, as any other level and the chicken would not fit in. Then I roasted it.
Coated in fresh chopped herbs and organic olive oil, the fragrance was divine! Golden, crispy and juicy. The chicken was beautifully and perfectly cooked, had rested on the plate for the appropriate time, and when I cut into it, the juices dripped from it. Pink, large, juicy, flavorful, tender, clean, free-range, antibiotic-free, hormone-free, animal by-product-free, this chicken happily ran around in the grass instead of being cooped up!
