Pear Chipotle Grill Sauce A Perfect Pear
This Grill sauce is a 2005 Golden Chile 1st Place Award Winner at the Fiery Food Challenge in Ft. Worth, Texas. That’s quite a mouthful for copy, and it’s quite something to wrap your mouth around!
Two things hit you right away with this sauce: one is its smoky chipotle aroma and flavor, the other its sugary, stick to the bottle glaze. Nothing can beat heat and sweet, and this pepper flecked, 15.75-ounce bottle is full of both.
The unusual ingredients as well as their balance make this winner adaptable to many uses. Organic pear puree, organic sugar, Jalapeno peppers, Chipotle chiles, apple cider vinegar, onions, sea salt and organic pear juice concentrate marry well with the lightness of pork, chicken, prawns and fish. The predominance of pears in this grill sauce makes for a unique combination with the heat and smokiness of the peppers: your taste buds will be fascinated!
This is Zingy over a tropical fruit salad, and the smoky sweetness would be killer with grilled Brie. The owner glazes salmon with it and simmers asparagus in it. You can see how many uses this sauce has…but the one I have my eye on is her chicken salad. Raisins, green onions, pears, this grill sauce, chicken and pecans. Oh my! The color is sort of pear and pepper golden, and the reds and greens of peppers compete with the flecks of chopped onion. The taste is smoky-smoky-sweet and the tongue tingling heat follows last. The consistency is fairly smooth, light and pourable which give it a variety of uses as a cooker, griller or dipper in a large selection of lighter foods. Very distinctive, this sauce will have a devoted following of smoky-sweet-heat fans who will thoroughly enjoy experiencing it on almost anything!
