Albacore Tuna Medallions

If you like fresh tuna then you need to try these tender and mild tuna medallions. The tuna arrives frozen in a sealed package and all you have to do it thaw and cook it to suit your recipe. The medallions make a beautiful presentation on a plate, or sliced, make it easy to incorporate bite-sized pieces into salads, pasta or tacos.

There were four medallions in a package that had a total weight of 6-ounces. Each piece of tuna was skinless and boneless and was 3-inches wide by 2-inches thick. The color was light and clean with no blemishes. These tuna are line-caught rather than net caught and are cleaned and frozen at sea, not at a factory, resulting in a fresher tasting fish.

This tuna is mild and tender enough for sushi, but we cooked it gently in coconut oil so that all the edges were cooked but it was still rare in the middle. After it was cooked, we dipped our bites into sesame oil with garlic and watched people close their eyes in ecstasy.

This tuna is mild, doesn’t fall apart and is certainly not mushy like you find in grocery store canned tuna. If you have never tried fresh tuna, this would be a great way for you to be introduced to it: not a big filet, but morsels that almost melt in your mouth. Just make sure that you buy enough of them, because everyone that we gave them to wanted more!
