Mellow Caribbean BBQ Sauce

Four Pure Zingers sat around a table (two men and two women) and tasted this BBQ sauce. To say that we could eat it with a spoon was putting it mildly! We literally ate it off spoons and oohed and aahed over the spicy, exotic flavor that was not hot.

Now one of the men and one of the women LOVE hot, but this BBQ sauce had so much flavor that they really didn’t care that it wasn’t hot; they just kept tasting and rolling their eyes. Instead of tomatoes there are bananas and there is also pineapple juice concentrate, cider vinegar, garlic, sea salt, spice, onion, evaporated cane juice, cayenne pepper, molasses and xanthum gum. Piquant, sweet-tart with a little pepper on the tip of our tongues, and we were all in BBQ heaven! The consistency is banana puree rich, and not overdone with molasses. The heat is mild but with just a whisper for intrigue and the flavor combination is bright and Zingy.

Each one of us got weak-kneed when we thought of how good this sauce would be on grilled fruit like peaches, pineapple, mango and bananas. Oh my, but it would make the most amaZing side dish or grilled compote to ladle over ice cream! This sauce would also be perfect on chicken as it would complement chicken’s delicate flavor rather than overwhelming it, plus, it would make rice taste like you had slaved over it.

How about using this in stir fry or even as a unique but incredibly satisfying shrimp cocktail sauce? Fish, grilled, broiled or even sautéed or baked would be perfect with this sauce: the fruit and spices being the perfect complement to any fish.

Brush it on, marinate in it, bake meat in it, add it to casseroles, or dip in it: however you eat it, your mouth will Zing with flavor rather than heat. With 12-ounces of it, you can use it and use it and use it!
