Cashew Lemon Cream Cookies Love at first bite! Can’t stop eating them. You would never know these cookies are healthy, they are that good. Being a product reviewer does have its benefits, especially in the cookie department. So reviewing Chunkie Dunkies is music to my tummy. Me, being the ultimate cookie monster, I definitely know a good cookie when I see one. At first blush, looking at the Chunkie Dunkies, I didn’t expect much. They looked pretty ordinary, much like a hefty, 1 ½ inch high, dense scoop of cookie dough, ready to go into the oven. But not these little Chunkies. These Chunkies (really, nothing little about them) never go into an oven. In fact they arrive at your door in a box of 5, slightly frozen and ready to eat. Of course, they are meant to be eaten thawed, however, any way you eat a Chunkie Dunkie, is the right way. The price: $6.49, without shipping. A little background. I discovered Chunkie Dunkies at the Natural Product Expo West in Anaheim. I was in a rush, and as I said, not too impressed at first blush. And being a gal not wanting to waste a calorie on a non worthy cookie, I picked up one chocolate chip cookie and left. BIG MISTAKE. It was love at first bite. I had to get more. I decided to order a whole bunch of cookies and brownies to review and get the entire team involved. So, I called the founder of Chunkie Dunkies, Dina Lauro, who also happens to be a Raw Gourmet Chef and teaches Vegan/Raw cooking at Hypocrites Health Institute in Florida. Established in 2011, Dina told me she wanted a healthier snack to enjoy. Something that satisfied her but that also was delicious and fit into her Vegan lifestyle. VOILA! Chunkie Dunkies was born. I then ordered off the website and after delivery, the reviewing began. Yeah, I can tell you that the cookie is Raw, Vegan, Non GMO, Paleo friendly, dairy free, gluten free, organic ingredients, 100% plant based, all the things we look for, but what good does it do if it doesn’t taste good? Right? Right. So now let’s get back to the taste of Cashew Lemon Cream Cookie. First of all, they remind all of us at PureZing of moist little lemon cakes. With a crunch. And it’s the finely grated raw cashew that gives the cookie the creamy crunchy taste. But there is nothing little about this cookie as it is bombarded with yummmie scrumptious ingredients and looks like a miniature dense, texture laden Bundt cake. With the combination of coconut cream, vanilla bean and lemon zest, you won’t feel like you are sacrificing anything with these sugar free goodies. Loaded with chia seeds for all the extra benefits of Omega 3’s, protein and fiber. Check out the ingredients of the Lemon Cream Cookie: Raw cashews, *dried unsulfured coconut, *raw coconut butter, *fresh lemon juice, *white chia seeds, vanilla (vegetable glyecerin, *vanilla beans), *fresh lemon zest, liquid stevia, sea salt *(organic). As you can see by the ingredients, the Lemon Cream Cookie is comprised mostly of organic and raw ingredients. So, if this is what you are basing your cookie on, we encourage you to pick the Lemon Cream. Sometimes the word healthy/Vegan/Organic/RAW gives food a bad name because healthy usually means flavor less. SO NOT THE CASE with all the Chunkie Dunkies. Your taste buds are telling you that you are eating the most decadent dessert on the planet. The only bad thing is you won’t be able to stop eating them. Oh, here’s a little added trivia. The Lemon Cream Cookie was developed at and for the Hypocrites Health Institute in West Palm Beach, Florida. Hypocrites is an organic, raw, vegan, juicing, educational nutrition based retreat center where people check themselves in for a health and wellness overhaul. Education and nutrition is a big part of Hippocrates and creating raw meals that are tasty to the palate is first and foremost on everyone’s plate.
