Makes 12-16 Citified Chicken Kabobs
INGREDIENTS:
1 lb. veal, cubed
1 lb. beef, cubed
1 lb. dark meat chicken, cubed
6 slices thick country bacon, cut into 6 pieces
4 Tablespoon olive oil
1/4 cup dry red wine
1 lemon, juiced
2 clove garlic, chopped or pressed
2 teaspoon thyme
2 pinch of sage
1 loaf thick bread cut into cubes
DIRECTIONS:
Make a marinade consisting of the wine, olive oil, garlic, lemon juice and
seasonings. Marinate all the meat cubes, plus the bacon for an hour.
On your kabob sticks alternate threading the bread cubes, veal, beef, chicken and bacon.
You can thread in some slices of red pepper for color if you like.
Place on a tray and sprinkle with some of the marinade and place under the broiler for about 30 minutes, rotating them occasionally.
For variety to this recipe, thread some fresh herbs in between the meat. This adds a wonderful flavor.
At the table, sprinkle the kabobs with Belamandil Coda 3 Meat Finishing Salt
