INGREDIENTS:
2 lbs. large red potatoes, unpeeled, in ¼-inch slices
½ cup extra virgin olive oil
3 Tablespoon finely chopped fresh rosemary
Sea salt and freshly ground pepper
DIRECTIONS:
Preheat oven to 350 degrees.
In a large bowl, pour oil over the potato slices and with clean hands, toss and separate the potatoes so that they are thoroughly covered in oil.
On a large, foil covered baking sheet, spread the potato slices in a single layer.
Sprinkle the slices evenly with the salt, pepper and rosemary.
Cover with foil and bake for 30 minutes.
Remove foil and continue baking 20-25 minutes till browned and tender.
