Makes approximately 10 biscuits
INGREDIENTS:
1 cup all-purpose flour
2 teaspoons baking powder
½ teaspoon sea salt
4 Tablespoons cold, cubed butter
½ cup homemade mashed potatoes
1/3 cup Parmesan cheese, diced finely
½ teaspoon dried oregano
1 teaspoon fresh chives, snipped
¼ small onion, finely minced
2 Tablespoon whole milk
1 egg yolk, beaten
DIRECTIONS:
Sift flour, baking powder and salt into large bowl. Add butter and cut it into dough using two table knives or pastry wire until dough looks like bread crumbs. Add mashed potatoes, oregano, chives, Parmesan, onion. Add enough milk to form a firm, but soft dough.
Preheat oven to 425 degrees.
Place dough on a lightly floured surface and knead for a few minutes. Form in a ball. Roll out to ½ -inch thick. Using a 2 ½ -inch fluted cutter, cut out biscuits. Reroll scraps and cut more biscuits until dough used up. Put biscuits on lightly greased cookie sheet and brush with beaten egg yolk.
Cook for 15 minutes till golden. Cool on a wire rack. |
