GARLICKY GREEK MASHED POTATOES (Skordalia) |

Serves 4-6
INGREDIENTS:
6 cloves garlic, peeled and trimmed
1 teaspoon sea salt
2 cups homemade mashed potatoes
½ cup extra virgin olive oil
¼ cup white wine vinegar
DIRECTIONS:
With a mortar and pestle or in a processor, mash the garlic and salt till a paste is formed.
Add the paste to the mashed potatoes and mix well.
In small amount, alternately add the vinegar and olive oil to the garlic potatoes, beating till the liquids are absorbed.
Serve warm or at room temperature with grilled or fried meats or fish, or as a dip for vegetables.
