4 cups organic peas
8-10 mint leaves
½ cup thinly sliced celery
½ cup green onions, thinly sliced (green and white parts)
2 Tablespoon chopped fresh chives
2 garlic cloves pressed or finely chopped
1 teaspoon sea salt
½ teaspoon freshly ground pepper
3 Tablespoons white wine vinegar
¼ cup extra virgin olive oil
1 Tablespoon freshly chopped mint
DIRECTIONS:
In a pan, place 1/3 cup of water, peas and mint leaves. Cover and cook over low heat for 8-10 minutes till al dente.
Drain and discard mint leaves.
Combine peas, celery, green onions, chives, garlic and salt and pepper in a bowl.
In a small bowl, whisk vinegar and oil together and add the chopped mint.
Pour the oil over the pea mixture and toss gently till completely mixed.
Cover and refrigerate for three hours till cold and flavors have blended.
