INGREDIENTS:
1 cup sliced, organic mango
1 cup sliced, organic strawberries
I cup sliced, organic pear
I cup organic blueberries
½ cup organic sugar
2 cups organic cream cheese
1-cup organic sour cream
1-teaspoon vanilla extract
1 bunch organic spearmint, chopped fine
DIRECTIONS:
In a large bowl, add all fruit, ½ cup sugar and mint. Let stand 1 hour at room temperature, then stir and refrigerate.
In another bowl, mix cream cheese, sour cream, vanilla and sugar.
To serve:
Start with the cream cheese mixture and alternate layers of fruit and cream cheese mixture in parfait glasses, wine glasses or small glass bowls.
