Cauliflower, a highly nutritious vegetable, contains many nutrients that can help prevent a range of diseases from cancer to cataracts.
Serves 4
INGREDIENTS:
3/4 cup organic dried millet, rinsed and picked over
1 tsp sea salt, plus more to taste
3 TB butter, (balance butter)
5 cloves garlic, minced
1/2 cup soy milk creamer
1/2 head cauliflower, broken into small florettes
freshly ground black pepper
1 small organic onion, chopped
DIRECTIONS:
Bring 2 cups water to a boil in a medium saucepan. Add millet and salt. Cover, reduce heat and simmer 30 minutes. Heat 1 tablespoon of the butter in
another saucepan on medium heat. Add half of the garlic and cook until light golden, 3 minutes. Add soy creamer, garlic, butter and cauliflower and bring to a simmer over, reduce heat and cook until very tender, about 12 minutes. Add millet to cauliflower and mash together with a potato masher or bur mixer until creamy, adding more soy creamer if needed. Season with salt and pepper, and serve.
