Serves 8
INGREDIENTS:
2 lbs. dried black beans
3 jalapenos, seeded and finely chopped
2 red onions, coarsely chopped
1 bunch fresh cilantro, (stems and leaves) coarsely chopped
1 ½ teaspoons sea salt
1 Tablespoon freshly ground pepper
1 Tablespoon ground cumin
2 cloves garlic, pressed or finely chopped
½ cup red wine vinegar
1 cup extra virgin olive oil
DIRECTIONS:
Cover the beans in cold water in a pan.
Bring to a boil, then reduce heat and simmer 35-40 minutes till beans are al dente.
Do not overcook. Drain and cool.
In a bowl, mix the cooled beans with the jalapeno, onions, cilantro and salt and pepper.
In a small bowl combine cumin, garlic, vinegar and oil and whisk till blended.
Pour the oil mixture over the bean mixture and mix well to combine.
Serve at room temperature.
