A glowing bronze can opens to reveal four round filets of smoked sturgeon. Neither one of us had ever had this before, so we were anxious to find out what it was all about. 5.5-ounces of sturgeon are cured with salt, sugar, spices and naturally alderwood smoked without preservatives.
After being marinated, smoked and sealed in the can, the fish is gently cooked. The can is filled with natural juices, which contain all the omega 3’s, and nutrition. One of the testers drank the juice and said that it tasted great, but it could also be used to moisten any recipes that you use the fish in.
We each had two filets with a salad and the first thing that struck us is that the mild fish flavor was perfectly balanced with the smoke. Neither one took over, and each complemented the other beautifully.
If you like smoked fish, this would be a great choice and likely to become a favorite! The texture is like albacore tuna: firm and drier than some other fish. We ate it plain for benefit of being able to describe it to you, but I know that it would be marvelous mixed with cream cheese and finely chopped onion and spread on crackers.
I would also use it as an unusual addition to a hot artichoke dip: the smoky flavor of the fish would add an elusive dimension to that classic. I definitely believe that the gourmet label is correct. This has a very distinct flavor that you keep nibbling just so you can keep experiencing it. If you wanted a gourmet variation on a tuna salad, this would be remarkable for its subtle smoky taste. Wonderfully unusual, this is an exceptionally healthy epicurean treat.
