We’re so pleased to find not only raw milk Gouda, but one from cows that are grass-fed. From an Amish farm where cheese making is a specialty comes a semi-firm cheese with a nutty, buttery flavor that is rich and satisfying. The label says it all: no color added, unpasteurized and aged at least 60 days. This cheese comes in a 10-½ ounce wedge with red wax on the edge. The fragrance is slightly nutty and the texture is smooth and without a crumble.
If you have never tasted raw milk Gouda, much less cheese that has not been mass manufactured, you’re in for a surprise. There is no shine to this cheese, no rubbery quality, no bland, predictable taste.
This cheese is a pale butter color, is matte and has a rich flavor in your mouth. The richness tells you that this cheese is made from milk that has not been boiled and has not been homogenized. Filled with nutrition and flavor, this is cheese that you can really taste…and the taste lingers in your mouth well after you have swallowed.
Gouda is a favorite of many people as it pairs well with so many other foods. We have tested this folded into scrambled eggs, in wraps with cheese, with various crackers, with olives and pickles and even grapes. It goes with successfully with everything! Not too strong or too dry, this cheese gets richer with age…if it lasts that long!
