If you don’t know about raw cheese, you need to know that it is from milk that has not been boiled or homogenized. This milk is exceptional as it is also from grass fed cows: just like in the good old days. Once upon a time, cows always ate grass, roamed freely and people safely drank their raw milk and ate the products made from it. This manufacturer believes in the health giving benefits of the way it was done for centuries before man interfered with chemicals and feed lots.
You can taste the difference in this Monterey Jack cheese. A nice thick wedge of semi soft pale yellow cheese is not rubbery or shiny because it has not been mass manufactured or processed. Aged at least sixty days, this cheese has a buttery feel in your mouth that gives way to the tang of Monterey Jack as you chew.

Mostly, we just eat it as is, so that we don’t disturb or destroy all the goodness that is found in cheese made from unboiled milk. Not only is the texture and flavor more divine, but the health benefits are outstanding: its easily digested for those that have lactose problems, it promoted healthy intestinal flora, and it contains CLA.
All that goodness because from start to finish there were no chemicals, boiling, corn feed lots or processing. You can really taste the difference!
