The fragrance is mild and the flavor is fresh: fruity, a little citrus, and then just the barest hint of fresh chile and garlic. This is a light and almost tropical tasting sauce. Light doesn’t mean it’s thin, it actually nicely thick, but it’s fruitiness makes it best suited for poultry, fish, vegetables, rice, noodles and even a fruit salad!
The flavors are beautifully blended in this sauce, not too sweet, not too hot, a mélange of fruity heat with tiny bits of chile, mango and peach that is almost a puree. To better describe it, here are the ingredients: water, peaches, agave syrup, mangos, onion, sweet red bell peppers, distilled vinegar, cornstarch, serrano chiles, parsley, kosher salt, garlic and spices. The garlic and onion is perfect with the fruit, making it complex and rich.
The color is sort of golden with flecks of red pepper, spices and chile. The heat range is about a four or five out of ten on the heat scale. A nice 13-ounce tall bottle will sauce meat, toss with rice, and even pour over some cream cheese for a nice appetizer with crackers.
We tried the owner’s recipe for Mango Peach Halibut with Brown Rice and found it easy, seasoned just right, and very satisfying: even on a cold winter day, this would be a taste of the islands! Try tossing a fresh, tropical fruit and grilled chicken salad with a thin coating of this…and brush it over the chicken as it cooks. This has a tropical taste that’s welcome all year round!
