Serves 6
INGREDIENTS:
1 ½ lbs. pumpkin, peeled and cubed
2 ½ cups organic chicken broth
1 onion, chopped
5 green onions, chopped (white tops only…retain green for garnish)
Sea salt and freshly ground pepper to taste
1 cup Greek-style yogurt
1 tomato, thinly sliced
yogurt
reserved green of onions, chopped for garnish
DIRECTIONS:
In a large pot, combine pumpkin cubes, broth, onion and white part of green onions. Bring to a boil, reduce heat to low and cover. Simmer 20 minutes or until pumkin is tender. Puree in processor, blender, or push through sieve. Sea salt and grinding of fresh pepper to taste.
Cover and chill in refrigerator.
Before serving, stir in 1 cup cold yogurt. Taste for salt. Serve in bowls and top with a slice of tomato, a dollop of yogurt and a sprinkle of chopped green onion. |
