Serves 4
INGREDIENTS:
4 cucumbers, peeled and seeded
1 small or 1/2 large clove of garlic
1 cup of plain yogurt (do not use low-fat. Try and get Greek yogurt in your health food store)
2 Tablespoons fresh lemon juice
1/4 cup water
2-3 green onions
3/4 cup fresh mint
Sea salt and fresh ground black pepper
DIRECTIONS:
Cut 1 cucumber into dice and leave it aside for garnish. Retain 1 stem of mint for garnish, too. Cut other cucumbers into large chunks. Put cucumbers, garlic, yogurt, lemon juice and water in a blender or a Cuisinart and purée until smooth.
Add green onions and mint leaves and purée briefly until smooth. Add salt and pepper. Taste and add a bit more lemon juice if you want a more piquant taste.
Chill (for at least 4 hours) until ready to serve. Stir well before serving, spoon into bowls and decorate the top with cubed cucumbers and a mint leaf or two.
Try to make this soup the day before you serve it as the flavors mingle and blend.
It is nice to have a cool glass of rosé with this soup. The pale pink looks great with the pale green of the soup! |
