Serves 4
INGREDIENTS:
2 cups organic tomatoes, diced
½ cup organic red onion, diced
¼ cup olive oil
1/3 cup organic fresh basil, finely chopped
¼ cup organic balsamic vinegar
3 organic garlic cloves, minced
Organic parmesan cheese for topping
Toast points of organic fresh bread
DIRECTIONS:
Toast points of cut bread into 2 x 2 –inch slices. Brush lightly with olive oil and bake at 350 for 2 minutes.
In a large bowl, combine tomatoes, basil, onions, garlic, oil and vinegar and mix well. Salt and pepper to taste.
Spoon onto toast points and sprinkle with Parmesan cheese and serve. |
