WILD RICE SALAD

Serves 4

INGREDIENTS:

2 cups wild rice
4 cups water
1 1/2 cups mixed nuts without peanuts
1 large carrot, shredded
6 chopped scallions (use mostly the green portion)
Dressing:
1/2 cup Organically Farmed Honey
1/4 cup Dark Sesame oil
3/4 teaspoon salt
1/2 teaspoon pepper

DIRECTIONS:

Wash rice and drain. Bring water to a boil. Add rice to boiling water, cover and turn to low. Cook until water is absorbed, about 1 hour. Cool rice.

In a large bowl, mix rice, nuts, shredded carrot, and scallions together.

In a measuring cup blend honey and sesame oil with salt and pepper. Whisk together. Drizzle over salad and stir. Refrigerate until cold.
