2 – 3 fresh peaches, pitted and thinly sliced
2 – balls of fresh Mozzarella, sliced into rounds
½ cup fresh basil leaves
Extra-Virgin olive oil
Balsamic Vinegar
Sea salt
DIRECTIONS:
Treat the peach slices as if they were tomatoes and constuct a caprese-like salad: layer peaches, Mozzarella and basil on plates. Whisk olive oil and balsamic vinegar together: amount will vary according to number of servings. Add Sea salt to taste. Drizzle over the salads and serve.
