TOMATO, GARLIC AND MINORCAN PEPPER SALAD/DIP

Please note for this recipe, the more ripe the tomato, the less oil is needed.

INGREDIENTS:

8 large, ripe tomatoes, chopped (the riper the better)
Olive oil
Garlic salt to taste (lots!)
4 minced datil peppers (can use from you Minorcan Datil Vinegar bottle!)
1 loaf of soft French bread

DIRECTIONS:

Put tomatoes, garlic salt and minced peppers in a shallow bowl and stir. The more you stir, the juicier the tomatoes get. Add just enough olive oil to make it a soup consistency. The longer it sits the better. Tear the French bread and put in a bowl or on a plate. Use the bread to dip into the ‘salad’.

Add more or less Minorcan peppers to taste.
