This recipe is easy…and good for you. Enjoy the colors as well as the fresh flavors.
Serves 4-6
INGREDIENTS:
Salad:
6 cups well washed spinach: hand torn
2 cups fresh strawberries: washed, hulled and cut in half
½ teaspoon lightly toasted sesame seeds
Fresh mint leaves for garnish if desired
Dressing:
¼ cup extra virgin olive oil
2 Tablespoons red wine vinegar
1 teaspoon sugar
2 teaspoons chopped fresh dill (or ½ teaspoon dried dill)
1/8 teaspoon onion powder
1 garlic clove pressed (or ¼ teaspoon garlic powder)
½ teaspoon mustard (or 1/8 teaspoon dry mustard)
DIRECTIONS:
Prepare the dressing by whisking ingredients together, or mixing together in a shaker jar.
Refrigerate dressing until ready to serve salad.
Place spinach, strawberries and sesame seeds into a salad bowl. Pour dressing over salad and toss lightly. Serve onto individual plates and garnish with fresh mint leaves.
