2 medium yellow squash
2 medium zucchini
1 medium sweet red pepper, sliced into thin rings
½ medium onion, sliced into thin rings
2 ounces pea pods, trimmed and julienned
3 Tablespoons olive oil
2 Tablespoons Balsamic vinegar
1 Tablespoon mayonnaise
1 teaspoon raw or organic honey
I clove garlic, freshly pressed
1 teaspoon fresh sage, finely chopped
½ teaspoon celery seeds
1 Tablespoon fresh dill, finely chopped
Sea salt and freshly ground pepper to taste
DIRECTIONS:
Slice squash as thin as possible (can use a food processor and use smallest slicing blade.).
Slice the red onion and red pepper into rings, same thickness as squash, separate onion into rings.
Mix the squash, onion, red pepper and pea pods in a bowl. Combine remaining ingredients. Pour over vegetables and toss to blend.
