4 skinless boneless chicken breasts
1 cup mayonnaise (homemade if possible)
½ cup honey
¼ cup Minorcan Datil Mustard
Create spice mixture to taste with: garlic salt, onion powder, black pepper, parsley, paprika, red pepper and a squeeze of orange juice or grated orange rind (mix all together)
1 can pineapple rings
DIRECTIONS:
Generously coat both sides of each chicken breast in mixture of seasonings. Mix together mayonnaise, honey and Minorcan Datil Mustard in small bowl. Grill or bake chicken until done without drying out chicken. Slather each chicken breast with sauce and place a pineapple ring on top. Serve on a bed of yellow rice.
