MARRAKECH PAPRIKA AND CUMIN CHICKEN

The blend of spices in this marinade give your chicken lovely exotic flavours of Morocco.

Serves 4

INGREDIENTS:

2 Tablespoon butter, melted
1 onion, quartered
1 garlic clove
1 Tablespoon fresh cilantro, chopped
1 Tablespoon fresh parsley, chopped
1 teaspoon ground cumin
1 teaspoon sweet paprika
½ teaspoon sea salt
4 free-range boneless chicken breasts with skin

DIRECTIONS:

In a blender or processor, puree all ingredients but chicken.

Loosen, but do not remove the skin on each chicken breast.

Divide the paste and put it under the skin of each breast. Cover and refrigerate for 1 hour.

Preheat grill or broiler. Broil or grill chicken, turning to avoid burning. Cook 25-30 minutes till juices run clear. Serve chicken with couscous or rice.
