Thai at home has never been so easy! 30 minutes to an exotic home-cooked meal
Serves 4
INGREDIENTS:
4 stalks of lemongrass
1 small red chili
1 Tablespoon coconut oil
1 large onion, sliced
3 garlic cloves, pressed or finely minced
8 skinless free-range chicken drumsticks
3 Tablespoons Thai fish sauce
1 teaspoon soy sauce
2 teaspoons sugar
1 cup water
DIRECTIONS:
Place chili and lemongrass in a blender and chop very finely.
Heat oil in a large skillet over medium heat and cook onion and garlic until soft.
Add the lemongrass mixture and cook 1 minute.
Put chicken in the skillet and pour over the fish sauce, soy sauce and sugar.
Mix, then add the water.
Lower the heat and simmer the chicken, uncovered, about 20-25 minutes, till cooked through.
Remove chicken and serve with rice or noodles if desired, pouring the pan sauce over all.
