A lovely sauce to give your roast chicken deep flavours.
Serves 6
INGREDIENTS:
Juice of 2 large lemons, divided
¼ cup extra virgin olive oil, divided
2 garlic cloves, pressed or finely minced
1 whole free-range chicken
1 Tablespoon grainy mustard
2 teaspoons fresh thyme, chopped
DIRECTIONS:
Preheat oven to 350 degrees.
Combine 1 Tablespoon of the lemon juice and 1 teaspoon of the olive oil with the garlic.
Brush the chicken with half the mixture.
Place the chicken on a rack in a roasting pan.
Bake for 1 ½ - 2 hours, basting frequently with remaining oil mixture.
While chicken is roasting, mix remaining lemon juice, olive oil, thyme and mustard in a small pan. Bring to a boil and then simmer, stirring constantly until blended and smooth.
Pour the sauce over the carved chicken and serve with rice or noodles.
