Serves 4
INGREDIENTS:
2 cups all-purpose flour
3 extra-large eggs
Pinch sea salt
½ teaspoon freshly ground pepper
24 large, fresh sage leaves, chopped
½ teaspoon sea salt
DIRECTIONS:
Mound the flour in the center of a pastry board. Make a well in the flour.
Put the eggs, salt and pepper and all the sage in the middle of the well.
Mix the ingredients in the well with a fork, incorporating more and more of the flour.
When blended and moist, begin kneading with your hands until the dough become elastic.
Continue to knead by hand or, put the dough through a pasta machine on progressively lower and lower settings.
Stretch the pasta by hand or in the machine to 1/16th –inch thick. If using the machine, do it on the second to last setting.
Cut ¼ -inch wide noodles.
Let noodles rest on a clean dish towel until ready to cook.
To cook, boil a large pot of water and add ½ teaspoon sea salt.
Add the pasta. If the pasta is very dry it will need more cooking.
Pasta will cook in 1-3 minutes.
Drain and put in warm serving bowl and toss with sauce or butter, grated cheese and herbs of your choice.
