4-5 cups of freshly cooked Couscous
Fresh juice of one lemon
5 T. olive oil
3 T. Harissa
½ bunch of fresh coriander, washed and chopped
1 bunch green onions, sliced
½ cup chopped tomatoes
¼ cup finely chopped cucumber
DIRECTIONS:
Prepare couscous according to package directions. Fluff with fork and let cool.
Mix together lemon juice, olive oil, Harissa, coriander and green onions. Stir into couscous and season to taste with sea salt and freshly ground pepper. Gently add tomatoes and cucumbers and cover.
May either refrigerate or leave on counter for one hour for flavors to marinate.
