1 lb Asian noodles or pasta, cooked al dente
3/4 cup Thai Ginger and Red Pepper Peanut Better
3 tablespoons soy sauce
1/2 cup olive oil
2 garlic cloves, finely minced
1 oz. roasted, salted peanuts, chopped (optional)
DIRECTIONS:
In a heavy saucepan, roast minced garlic in 1/2-cup olive oil until just turning golden; remove from heat. Add soy sauce and Peanut Better and whisk together until combined. Heat mixture on low for 1 minute, stirring constantly. Drain noodles and toss with warm sauce until sauce is well distributed. Sprinkle with chopped peanuts and serve immediately.
