You can replace the lamb with ground beef, or use a combination
Serves 6
INGREDIENTS:
1 ½ lb. ground beef or lamb (or combination)
1 teaspoon ground cumin
2 teaspoons hot paprika
1 pinch cayenne
2 cups fresh parsley, chopped
2 cups fresh cilantro, chopped
1 ¼ teaspoons ground cinnamon
2 Tablespoons finely chopped fresh mint
1 onion, finely chopped
Sea salt and freshly ground pepper to taste
DIRECTIONS:
In a large bowl, place the meat.
Add all other ingredients and mix well with your hands.
Cover and put in refrigerator to let flavors blend.
With well-soaked wooden skewers, metal skewers or sturdy sprigs of rosemary:
Take an egg-sized portion of meat and put it on a skewer.
Press and mold the meat into a sausage shape 4-5 inches long.
Press the ends of the meat firmly onto the skewer to prevent meat slipping during turning.
Prepare grill by letting fire burn down, or heat broiler.
Place skewers on grill or under broiler.
Cook turning often so that they do not burn.
Cook at least 8 minutes. Remove from skewers and serve.
