This sauce is great over sliced turkey breast with caramelized onions, topped with sour cream.
INGREDIENTS:
¼ cup extra virgin olive oil
1 large onion thickly sliced
1 10-ounce package frozen chopped spinach or, 3 cups fresh spinach
1 jalapeno, seeded and chopped
¾ cup chopped cilantro
½ cup organic or homemade chicken stock
Sea salt and freshly ground pepper to taste
DIRECTIONS:
If using frozen spinach, thaw and squeeze to remove water.
If using fresh spinach, coarsely chop.
In a skillet over medium heat, add the oil and onion and sauté till soft.
Add the spinach, chile, cilantro, stock and salt and pepper.
Simmer 10-15 minutes and remove from heat.
Cool slightly and then puree in a processor till smooth.
Note: This sauce will lose its color the longer it stands. Prepare close to serving.
