MOROCCAN CILANTRO MARINADE (CHERMOULA) |

Makes a wonderful marinade for fish or chicken.
INGREDIENTS:
1 cup fresh cilantro leaves
1 cup fresh parsley
12 garlic cloves
1 teaspoon sea salt
2 lemons, juiced
3 Tablespoons peanut oil
1 Tablespoon sweet paprika
1 Tablespoon ground cumin
Pinch of cayenne pepper
DIRECTIONS:
In a processor, puree cilantro, parsley, garlic, salt, lemon juice and oil.
Put puree in bowl and stir in paprika, cayenne and cumin.
Marinate fish (or chicken) several hours.
Remove from marinade, pat dry and dredge in flour. Sauté fish or chicken in hot oil till golden and cooked.
May remove parsley from ingredients to achieve more pungent marinade.
