1- ½ cups water
1-cup sugar
1 large piece of fresh ginger, peeled and cut into thin slices
1 lime, cut into slices
Juice from 1 lime
1 Tablespoon maple syrup
DIRECTIONS:
In a medium pan, combine water, sugar, ginger and lime slices. Simmer until liquid is infused with ginger flavor: about 7 minutes.
Remove from heat and stir in limejuice and maple syrup. Strain and cool.
Place syrup in a small pitcher and pass with fruit chunks on a platter, or toss with fruit chunks and let marinate for half an hour before serving.
