8 mushrooms, finely chopped
2 Tablespoons butter or extra-virgin olive oil
4 green onions, finely chopped including 2-inches of green
3 –ounces softened cream cheese
½ cup Greek-style yogurt
1 garlic clove, pressed of finely minced
Sea salt
Garnish of chopped dill, coriander or parsley
DIRECTIONS:
Heat butter in skillet over medium heat. Saute mushrooms and onions until golden. Remove from heat and cool.
With a fork, mash cream cheese, yogurt and garlic till smooth. Add sauteed mushroom mixture. Add Sea salt to taste. Cover and refrigerate until ready to serve.
Serve with crackers at room temperature and garnish with choice of herbs.
