INGREDIENTS:
12 ounces Mexican green tomatillo tomatoes
3/4 small organic onion, chopped
1 clove organic garlic, minced
1 Tablespoon fine-chopped cilantro
1 teaspoon minced Jalapeno chilies
1/4 teaspoon ground cumin
1/8 teaspoon sugar
Sea salt, to taste
DIRECTIONS:
Remove husks from green tomatoes. In a large pan, cove tomatoes in water and simmer 5 to 8 minutes until tender. Drain and reserve cooking liquid. Cool tomatoes.
Process tomatoes, onions, garlic, cilantro, jalapeno chilies, cumin and sugar until almost smooth. Add enough reserved liquid to make medium dipping consistency Season with salt.
Serve with pita bread, with grilled meats, and use as a sauce or relish to spice up other recipes
