GREAT GREEK OLIVE TAPENADE

Use as a spread for sandwiches or wraps, serve with crackers and cheese or use as a condiment.
INGREDIENTS:
30 pitted Kalamata olives, coarsely chopped
1 ½ Tablespoons rinsed, drained, and chopped capers
1-2 teaspoons freshly squeezed lemon juice
3 teaspoons extra virgin organic olive oil
1/2 teaspoon anchovy paste (optional)
Freshly ground black pepper
DIRECTIONS:
Mix all ingredients together. Cover, refrigerate and use within two weeks.
