1 avocado, pitted and peeled
1 small jalapeno chile
4 Tablespoons fresh cilantro, chopped, divided
¼ teaspoon Sea salt
½ teaspoon fresh lemon juice
¾ cup of water
3-4 Tablespoon onions, diced
DIRECTIONS:
Put all the ingredients, except the diced onion and 1 Tablespoon of chopped cilantro, into a food processor and puree until smooth. Pour guacamole into a bowl and stir in the onion, and remaining 1Tablespoon of chopped cilantro.
Serve immediately, or place plastic wrap directly on surface of guacamole, leaving no air pockets. Refrigerate for up to several days. Return to room temperature before eating.
