2 rainbow trout fillets
1 Tablespoon extra virgin olive oil
2 garlic cloves, freshly pressed or finely minced
1 teaspoon freshly ground black pepper
1 Tablespoon minced fresh dill
1 small Jalapeno pepper sliced horizontally
1 organic lemon, sliced
DIRECTIONS:
Preheat the oven to 400 degrees
Rinse fish and pat dry.
Rub the fish with olive oil and sprinkle with black pepper, place fish separate pieces of foil.
Top with remaining ingredients with lemon slices arranged over the top.
Seal the foil and place the fish packets on a baking sheet.
Bake for 15 to 20 minutes. Fish is done when it flakes easily with a fork.
