STEAMED GINGER SNAPPER

INGREDIENTS:

4 red snapper filets
4 green onions, shredded/julienned
4 peeled pieces of gineroot, julienned
4 Tablespoons sake
2 Tablespoons mirin
2 Tablespoons soy sauce
Sea salt

DIRECTIONS:

Preheat oven to 350 degrees.

Cut off four pieces of foil. On each piece of foil, sprinkle half the onions and half the ginger.
Put the fish on top. Evenly distribute the remaining onions and ginger. Raise edge of foil. Mix sake, mirin and soy sauce and pour over each piece of fish. Lightly salt fish. Bring the edges of the foil together and fold like a package around each fish.

Bake for 30 minutes. Remove from foil and serve.
