This dressing is excellent for tossed green salads
DIRECTIONS:
Fill a large, lidded jar with any variety of soft or medium soft little goat cheeses. Add sprigs of fresh rosemary, marjoram, sage and thyme, a dozen black peppercorns and 2 or 3 dried chilies. Fill the jar with extra virgin olive oil to cover. Keep sealed for 10 days. Use oil and consume cheese within a month after opening.
