Crème fraiche is richer and smoother than sour cream but unlike sour cream, it does not break down when heated.
This French version of sour cream is easy to make, as well as healthy as the light fermentation process contains beneficial probiotics.
INGREDIENTS:
1 cup organic heavy cream
¼ cup buttermilk (preferably organic)
1 Tablespoon fresh lemon juice
DIRECTIONS:
Mix ingredients well in a bowl. Cover and let sit at room temperature 6-8 hours, then refrigerate.
Use as you would sour cream and enjoy cooking with it! It tastes great with fresh fruits, topping a variety of vegetables, in casseroles, and dolloped on hot or cold soups.
