5 ounces blue cheese (Danish or Stilton)
2/3 cup softened cream cheese
5 Tablespoons Greek-style yogurt
Sea salt and freshly ground pepper
DIRECTIONS:
Put the softened cream cheese in a bowl and whip it with a fork till creamy. With your fingers, crumble the blue cheese into the bowl. Blend the two cheeses thoroughly. Add 3 Tablespoons of the yogurt and mix with the cheese. Add more yogurt until the desired consistency is reached. Add Sea salt and grinds of pepper to taste.
Serve with any of the following: apple wedges, pear wedges, fresh pineapple wedges and / or small chunks of celery or zucchini.
This dip is thick, but may be thinned further with additional yogurt to make a sauce for pasta or grilled beef, or rich salad dressing.
