2 cups rinsed mint leaves
8 teaspoons superfine sugar
l cup light rum
¾ cup fresh limejuice
Ice
Soda water
DIRECTIONS:
In a medium bowl, crush sugar and mint leaves with a wooden spoon. May be pulsed in a processor until mint is coarsely chopped.
Add light rum and fresh limejuice: mix well. Pour mixture in equal amounts into four tall, clear glasses. Add ice cubes and a dollop of soda water to each glass. Garnish with a sprig of fresh mint leaves or a thin slice of lime.
