MINT LEAF ICE CREAM |

Makes 1 QUART
INGREDIENTS:
¾ cup fresh mint leaves (may substitute basil)
2 cups organic whipping cream
2/3 cup sugar
1 cup whole, organic milk
DIRECTIONS:
In a medium pan combine mint leaves, cream and sugar. Stir just until the mixture begins to boil. Remove from heat and let steep for 1 hour.
Strain out the mint leaves.
Add the milk, stir and refrigerate at least 2 hours (or overnight). Place mixture in bowl and ice cream maker and process till frozen.
Serve into bowls. May garnish with mint leaves.
