INGREDIENTS:
3 cups freshly cooked and pureed squash
4 eggs
1 ¾ cups sugar (may reduce sugar to 1 ¼ cups: it’s still sweet)
1-½ cups warm coconut oil
3 cups flour
1 ½ teaspoon cinnamon
1-teaspoon salt
2-teaspoon baking powder
2-teaspoons baking soda
¾ cup raisins
½ cup walnuts/pecans
DIRECTIONS:
At low speed, beat the squash, eggs, sugar and oil. In another bowl, beat flour, cinnamon, salt, baking soda and baking powder. Gradually mix together. When mixed, add raisins and nuts.
Put in tube pan.
Bake at 350°F. degrees for 1 hour.
May frost with honey and powdered sugar or leave plain.
Makes a great breakfast bread, or healthy snack. |
